Your Pantry's Resolutions


Did you decide to eat healthfully this year? Diet and weight loss resolutions are the most common resolutions made after the new year. This year, try focusing more on developing healthy habits and less about weight loss or only eating fruits and vegetables. Start by stocking your kitchen with these healthy foods. By having these foods on hand you can easily build a healthy meal without breaking the bank.
Frozen Vegetables
Frozen Fruit
Canned beans (keep a variety – black, pinto, red, kidney, etc)
Canned tomatoes
Canned and/or Frozen unbreaded chicken
Canned tuna and chicken
Eggs or Egg Substitutes
Low Fat Cheese
Fresh, cut and washed lettuce or a box of lettuce
Low Sodium Chicken, Beef, or Vegetable Broth
Whole wheat tortillas


So when you get these items, what can you do with them? How do you make an quick and easy meal? This is a great recipe to start with. You can cook it on the stove or in the microwave!
Breakfast Taco (or Dinner Taco!)
Ingredients:
1 small whole wheat tortilla
2 eggs
1 TBSP water
1 slice cheese
Handful Green onions
Handful Fresh or frozen spinach
Salsa
* Prepare a nonstick skillet by spraying with cooking spray and heating to medium heat on the stove. Crack the eggs
into a bowl and add 1 TBSP water. Whisk with a fork until the yolk and white are mixed. Sauté the green onions and spinach in the skillet for about 2-3 minutes. Add the egg, stirring with a spatula until cooked.
-Alternative: Spray a microwave safe bowl with cooking spray. Crack the eggs into the bowl and break the yolk with a fork. Microwave on high for about 2 minutes (cooking time varies based on your microwave).
* Serve the scrambled egg in a whole wheat tortilla with a slice of cheese and salsa.
* Make your meal complete with fresh fruit and a side salad or steamed frozen veggies.
